Lean Turkey Breast in Honey-Sherry Baste

Preparation Time: 12 hours

Cooking Time: 4 hrs 10 min

Yield: 6 servings

Suggested wood: Pecan, cherry, hickory

Smoker temperature: 225°F

Ingredients

 3-3½ lbs. skinless boneless turkey breast rinsed and pat-dried

Baste:

 ½ Cup pure honey

 1 Tablespoon butter

 ¼ Dry sherry

 Juice of 1 lemon

 1 Tablespoon salt

Preparation

 Whisk together honey, butter, and sherry in a small saucepan over a low heat just until butter is melted and well combined.

 Remove from heat and stir in lemon juice and salt, then allow cooling.

 Place turkey breast and baste in a large re-sealable plastic bag then seal it. - Refrigerate for at least 6 to 8 hours.

 Pre-heat it to 225°F.

 Smoke for about 4 hours or until internal temperature reaches 170°F.

 Remove from heat and let rest for 10 min before serving.
